Low-calorie and flavorful.
This is a flavorsome soup that is very nutritional and easy to make.
Ingredients:
1 large onion, chopped
4-5 garlic cloves. minced or graded (use less if this is too much for you)
5-6 celery stalks, chopped
2-3 zucchinis, cubed
2 potatoes, cubed
1 head of cauliflower, broken into bite sized pieces
1 bunch of kale, sliced
5-6 cups chopped cabbage
Juice of one lemon
1 teaspoon cumin
1 teaspoon parsley
1/2 teaspoon cayenne pepper (optional)
1/2 teaspoon turmeric (optional)
1-2 tablespoons olive oil
1-2 tablespoons butter
1 package Chicken stock (or 1 cube chicken bullion)
Salt and pepper
Instructions:
Chop the vegetables and saute in a heavy pot with the olive oil and butter, starting with the onions, celery and garlic, followed by the potatoes, cabbage and kale.
Add the chicken stock and water (if needed to coat) the veggies.
Have the soup simmer for 30 minutes or until the veggies are starting to soften, make sure the potato is no longer hard.
Add the cauliflower and simmer for another 10 minutes.
Remove from heat and top with lemon juice.
I like to top mine with a little shredded cheese and a sprinkle of parsley. The salty creamy cheese and fresh parsley adds a layer of flavoring that tops off the soup nicely.
