Light, delicious, and protein filled breakfast!
I used pita bread in the image above, which it is a popular bread in Lebanon.
2 small potatoes
1 garlic clove
1/2 of a scallion
1 teaspoon of avocado oil (can use any kind of oil, I prefer avocado oil because it is the best for high heat)
Pepper to taste
Cheese of your choice to taste (preferably feta cheese)
Pour avocado oil into pan and heat on low.
Chop potatoes and garlic, cook potatoes until golden brown then add the garlic and cook until golden brown. Mix the potatoes and garlic, so they cook evenly.
Crack eggs into bowl and whisk, pour eggs on top of potatoes and garlic and mix eggs.
Add pepper and salt (if using feta cheese do not put salt, as the cheese is already salty)
Once eggs are cooked sprinkle cheese of your choice on top and allow it to melt.
Plate and top with chopped chives. You can also eat this with the bread of your choice. Enjoy!
