Indulge guilt-free! This cake has the perfect amount of sweetness and the apples add a little bit of crunch.
1 cup of sugar
1 cup of milk (room temperature)
2 eggs (room temperature)
1 tsp of vanilla extract
1/4 tsp of cinnamon
1/4 tsp of cardamom
1 tbsp of baking powder
1/4 cup of avocado oil or apple sauce
1 1/2 cup of whole wheat flour
A pinch of salt
2-3 large apples (I used honey crisp apples)
Butter (to coat pan)
2 tbsp of apricot preserves (topping)
Preheat oven to 350°F and butter the pan
Core and cut apples in half. Then thinly slice the apples and set aside.
Combine all the dry ingredients in one bowl and mix
Add the wet ingredients to the dry ingredients and mix
Pour mixture into pan (use 9 inch springform pan)
Overlay apples around the pan so they are overlapping each other completely covering the top of the cake (use image above for reference)
Bake for 45-55 min at 350°F
Let cake cool for 5 min then remove from pan and top with apricot preserves.
