Unusual root vegetable you'd never think to try.
Fennel has licorice flavor that is a perfect appetizer/snack. I also love this root vegetable accompanying a main dish.
1 fennel, sliced
2 tablespoons of olive oil
1 tablespoon balsamic (optional)
1/4 cup of Parmesan cheese
1/4 teaspoon Italian herbs
Salt + pepper to taste
Preheat the oven to 375 degrees F
Cut the heart out of the fennel
Coat fennel with olive oil, balsamic vinegar, salt and pepper.
Lay on a baking sheet and sprinkle with Parmesan cheese.
Bake the fennel for 40-50 minutes or until it reaches the desired softness.
