Roasted Fennel with Parmesan

Unusual root vegetable you'd never think to try.

Fennel has licorice flavor that is a perfect appetizer/snack. I also love this root vegetable accompanying a main dish.


  • 1 fennel, sliced

  • 2 tablespoons of olive oil

  • 1 tablespoon balsamic (optional)

  • 1/4 cup of Parmesan cheese

  • 1/4 teaspoon Italian herbs

  • Salt + pepper to taste


  1. Preheat the oven to 375 degrees F

  2. Cut the heart out of the fennel

  3. Coat fennel with olive oil, balsamic vinegar, salt and pepper.

  4. Lay on a baking sheet and sprinkle with Parmesan cheese.

  5. Bake the fennel for 40-50 minutes or until it reaches the desired softness.
