Tasty is the new healthy. This is a quick and easy salad that will go well with any meat you are preparing or on it's own.
3-4 cups of kale
1 large cucumber
1 large tomato
1 small onion (I used a white onion; however, you can use a red onion if preferred)
2 sticks of celery
1/2 a bell pepper
2-3 tablespoons olive oil
2-3 tablespoons balsamic vinegar
Salt + pepper to taste
Chop all the ingredients and place in the bowl.
Sprinkle the salt and pepper followed by drizzling the oil and vinegar over the salad.
Mix and enjoy with you favorite meat or just on it's own!
I love this salad with my favorite chicken kabobs or on it's own as a light lunch or dinner.
