A perfect balance of nutty, salty and creamy.
This is a delicious goat cheese salad that is sustainable and has mouthwatering flavors.
Ingredients:
300 gram log of goat cheese
1 tablespoon butter (or oil if you do not have butter)
1 egg (or 1 egg white)
Salt and pepper to taste
Herb breadcrumb mix:
1/4 cup of breadcrumbs
1 teaspoon dry Italian seasoning
Salt and pepper to taste
Salad:
5-6 cups spring mix lettuce or chopped romaine lettuce
3 baby cucumbers (or half a large one)
1 large avocado, sliced (optional)
1/2 a package of bacon (optional)
1/2 cup of walnuts, toasted
Dressing:
2-3 tablespoons of balsamic vinegar
2-3 tablespoons of olive oil
1/4 teaspoon dry Italian seasoning
Salt and pepper to taste
Instructions:
Slice the goat cheese log into half inch slices and place in the refrigerator. This will help the disks set before we coat them with egg wash and bread crumb mixture.
Beat one egg in a small bowl with salt and pepper, and set aside. The egg white will be used to coat the cheese disks before coating with bread crumbs
Mix the breadcrumbs with Italian herbs and salt and pepper, set aside.
Lay the salad greens in a serving bowl and top with sliced cucumbers. If you are adding avocado slices, I would recommend adding the avocado before drizzling the balsamic dressing over the salad greens.
In a heavy sauce pan, toast the walnuts and set aside.
After the walnuts are toasted use the same pan to fry the bacon strips to a crisp. Set the strips aside.
Once cool, lay the bacon and walnuts over the bed of greens. Drizzle with the dressing and toss lightly.
Heat a saucepan with 1 tablespoon of butter.
Take the goat cheese out of the refrigerator and dip the individual disks into the egg wash, followed by coating in the disks in the breadcrumb mixture.
Fry the goat cheese in the sauce pan, on both sides. Note: do leave the goat cheese for more than a few seconds on each side. Over frying the goat cheese will cause it to melt.
Lay the warm goat cheese over the salad.
