This salad is perfect for a hot summer day and compliments any dish.
Refreshing and cooling. This is a traditional Lebanese salad made with in season ripe and plump juicy tomatoes.
Ingredients:
3-4 cups of plum tomatoes, slice to make them bite sized
3 baby cucumbers (or half a large one)
Juice of one lemon
3-4 tablespoons of olive oil
Optional: sprinkle of dry thyme
Salt and pepper to taste
Instructions:
Chop the tomatoes and cucumbers. Place in a serving bowl.
Squeeze the lemon juice over the salad ingredients.
sprinkle the thyme, salt, pepper, and toss the salad with a little olive oil.
